Two-tone Zucchini noodles with pink clover sprouts and wild herbs

Ingredients:

  • Sprouts
  • Young chard or baby spinach
  • Tomatoes, peeled and deseeded
  • Walnuts (best soaked for about 6 hours)
  • Wild herbs
  • 2 zucchini (green and yellow)
  • Olive oil
  • Small piece of onion

Method:

  1. Cut zucchini into spaghetti-shaped strips with a spiral cutter.
  2. Arrange the chard and zucchini on the plate
  3. Generously distribute the rose clover sprouts
  4. Garnish with the raw sauce of pureed tomato, wild herbs, walnuts, olive oil and onion
